A nice treat, without using sugar. The muffins are also glutenfree, so perfectly compatible for people with celiac disease. Be careful if you decide to bake them for someone with celiac disease though. Make sure you use buckwheat without ANY traces of gluten.
Whenever I have bananas and apples laying around, I am tempted to bake up this recipe. It’s easy to make and a perfect guilt-free snack!
Ingredients (12 servings, depending the size you use)
- 75 gr buckwheat flour
- 4 eggs
- 1 banana, medium sized
- 1 apple, finely chopped
- 2 tbs honey
- 2 ts cinnamon
- 2 ts baking powder
- pinch of salt
Preheat oven to 200 degrees. Whisk the flour and the eggs in a bowl until it’s smooth, add cinnamon, honey, baking powder, salt, mashed banana and finely chopped apple chunks.
Pour the batter in muffin cups or a muffin baking form. Bake for approximately 30 minutes, until deep golden brown and a toothpick comes out clean. Enjoy!
