One of my favourite dishes – and so easy to prepare! Perfect to make the night before work.
Ingredients (1 serving, just multiply ingredients if you want to cook for more)
- 50 gr whole wheat pasta
- 3 or 4 mushrooms
- 2 hands of baby spinach
- 8 cherry tomatoes
- 62 gr mozzarella
- 40 ml low fat cooking cream
- 1 ts garlic powder
- pinch of pepper and salt
Cook the whole wheat pasta according to instructions.
Cut the mushrooms in pieces and fry them a little. Add the spices and the cooking cream and whisk a little. Then pour this over the pasta and lay the mozzarella, spinach and tomatoes on top. Usually I take this for lunch, so when I will eat it, I’ll heat it up for 2 minutes in the microwave.
If you prefer to avoid the microwave, you could add the latest ingredients with the cooking cream and heat everything in the frying pan.
